Guyanese chow mein is a popular creole dish in the West Indies because of the mix of African, Chinese, Indian, and Indigenous influences. This style of preparing chow mein is often served in Guyanase and Trinidaddian restaurants, seasoned meat can be added with the same vegetables. Chow mein is a colorful dish, if you have access to purple cabbage and red bell peppers, they brighten the dish while providing nutrition and fiber.

🌾 Ingredients

Noodles

  • 1 12oz. pack of dried chow main noodles
  • 1 tsp. of Chinese Five Spice Powder
  • 1 Tbs. Sesame Oil
  • Water for boiling noodles

Vegetables

  • 2 Stalks of Scallions
  • 1 Cup of Bell Pepper or Sweet Peppers
  • 1 Cup of Cabbage (White or Purple, not Nappa)
  • 1 Cup of Bok Choy
  • 1 Cup of Carrot
  • 1 Cup of White Button Mushrooms
  • 0.5 Cup of Corn
  • 0.5 Cup of Green Peas
  • 2 tsp. of grated Garlic
  • 1 tsp. of grated Ginger
  • 1 tsp. of Chinese Five Spice Powder
  • Chilis, preferably Wiri Wiri
  • Salt

Sauce

  • 3-4 Tbs. of Soy Sauce
  • 1 Tbs. of Oyster Sauce
  • 1 Tbs. of Sesame Oil

🍽️ Instructions

Boil Noodles

  1. Boil noodles to package directions, 10-12 minutes. Drain in a collinder.
  2. Add sesame oil and use tongs to pull and mix noodles.
  3. Once noodles are lightly oiled, add Five Spice Powder and mix, set aside.

Prepare Vegetables

  1. Julienne vegetables in a uniform length.
  2. Grate Garlic and Ginger, slice Wiri Wiri or chili peppers thinly.
    1. If desired, use a paste.
  3. Combine liquids in a cup and set aside.

Sautée

  1. To an oiled wok, dutchie, or heavy bottom pan, add your Garlic and Ginger, cook until fragrant.
  2. Add your vegetables in order of desired texture or all together, add salt as desired throughout.
    1. Preferred order; Carrot, Cabbage, Bell Peppers, Mushrooms, Bok Choy, Corn, Peas
  3. Add Five Spice Powder if desired.
  4. Cook vegetables to desired texture and doneness.

Combine

  1. Add noodles and mix in sauce, lower the heat to avoid overcooking.
  2. Cook until desired texture on the noodles.
