Baaji or Spinach is another commonly accessible stewed dish that requires quality fresh ingredients to enjoy the most nutritious veggie to add to rice and daal. Spinach is used as a category of leafy veggies that can be braised and served as is or with a few aromatics to lift the flavor. Store bough spinach leaves are fine, but spinach with the stem can be used if available. Other leafy greens can bulk the dish up and add different textures.

🌾 Ingredients

Veggies

  • 5 Cups of Spinach
  • 1 Cup of Bok Choy
  • 3-4 Thai Chili Peppers
  • 2 Tbs of Onion
  • 1 Tbs of Garlic
  • 8 oz of grated coconut

Seasoning

  • Complete Seasoning or Salt
  • Jeera Seeds and Powder
  • Nutmeg or All Spice

🍽️ Instructions

Cook Aromatics

  1. Cook onions and garlic until golden brown.
  2. Add chili peppers minced or whole.

Add Spinach and Wilt

  1. Add Spinach and Bok Choy. Season, stir up ingredients and cover the lid to let the spinach wilt.
  2. Periodically stir from the bottom to allow new spinach to wilt down.

Add Coconut

  1. Once spinach is completely wilted and its water cooked out, add grated coconut and season to taste.
  2. Cook for a few minutes or until frozen grated coconut’s water evaporates.
  3. Add additional seasoning to taste or raw spices like grated nutmeg and all spice berries.
